Mountain Mills Whole Wheat Flour contains the wheat germ and wheat bran making it more healthy than traditional wheat flour. Mountain Mills Whole Wheat Flour is a convenitionally milled whole wheat flour. For a stone ground whole wheat flour try our Rocky Mountain Whole Wheat Flour. Whole wheat flour is higher in fiber, vitamin E, some B vitamins and trace minerals, and protein than enriched white flour. Because of the presence of bran, which reduces gluten development, baked goods made from whole wheat flour are naturally heavier and denser than those made with white flour. Many bakers combine whole wheat and white flour in order to gain the attributes of both. The wheat germ and wheat bran give the flour a more hearty apprearance with specs of brown throughout. Mountain Mills Whole Wheat flour shall be made of 100 percent whole premium quality Spring Wheat that has been scientifically cleaned and processed. This product is not enriched, does not contain any bleaching agents and is un-malted.
