Fructose is the sweetest of all naturally occurring sugars. Fructose is a major constituent of many fruits, berries, vegetables, honey, sucrose, and high fructose corn syrup (HFCS). It may be used alone, or in combination with other sweeteners, in a variety of food products.

Typical formulations include powdered beverages, sports drinks, and reduced calorie beverages.

Krystar ® Crystalline Fructose is a nutritive corn sweetener that is processed from high fructose corn syrup (HFCS) into a pure white free flowing crystalline material or a pure clear syrup.

Krystar ® Crystalline Fructose is a sweetener that is also a functional ingredient in food systems. Its properties differ from that of sucrose or HFCS and allow formulators to take advantage of its high relative sweetness, synergy with nutritive and non-nutritive sweeteners and interaction with a wide variety of food ingredients.

The relative sweetness of Krystar ® Crystalline Fructose is 16.977 when compared to sucrose at 100. Additionally, fructose and sucrose are synergistically sweet; a 50/50 blend acheives a relative sweetness of 128. This allows for a reduction in sweetener and calories without a reduction in sweetness perception. In general, the relative sweetness of KRYSTAR ® or any sweetener is formulation dependent.
